Mason Jar Iced Coffee

M and I actually got to spend over three whole days together this week while visiting our parents’ in Syracuse.  The stars aligned for our schedules to match up because I was able to find a plane ticket that I didn’t need to take out a small loan for and M had a free week because it was school vacation week for T.

As always, my mom had special meals and treats planned for us, but one of our favorite afternoon pick-me-ups (which I am learning is very necessary with two active babies running around) were the mason jar-brewed iced coffee.  She had made two different types made with regular coffee and a caramel flavored coffee.  The mixture of the strong smooth coffee with the rich caramel flavor, the creamy half and half, and sweetness of the condensed milk was the perfect combination.

The perfect afternoon pick-me-up!
Ingredients
  • ⅔ cup ground coffee, flavored if you prefer
  • Cold water
  • Half-and-half or milk
  • Sweet condensed milk
Instructions
  1. In a 1-quart pitcher or mason jar add in ⅔ cup of ground coffee. (We used caramel-flavored coffee). Fill with cold water and set on the counter for 12-24 hours.
  2. After the coffee brews, line a mesh sieve with cheese cloth and a coffee filter. Place over a 1-quart measuring cup. Start off spooning the grounds at the top of the jar into the filter. Slowly pour the coffee through the filter until all the liquid passes through the filter, cheese cloth, and sieve.
  3. While the remaining coffee is filtering, rinse out the pitcher or mason jar.
  4. Squeeze the remaining coffee out of the filter. Pour the filtered coffee back into mason jar. Store in the refrigerator until ready to serve.
  5. To serve:
  6. Fill glass with ice. Pour in the coffee, followed by a few tablespoons of half and half or milk and then 1-2 spoonfuls of sweetened condensed milk. Stir together and serve with a spoon. Add sugar or sweetener if your prefer your drink sweeter. Enjoy!

Banana Daiquiris

Banana Daiquiris

I made these Banana Daiquiris during Memorial Day weekend when I was testing out a few frozen drink recipes (the other recipe I tried was one for Strawberry Daiquiris.)   These were creamy, refreshing and a little boozy,  all good things in my book.  I found the recipe on a whim while I was at the grocery store getting the ingredients with my little sister M and my boyfriend.   The boyfriend was pushing for Banana Daiquiris because they are one of his favorites.  When claiming his receipts for all his work trips to Costa Rica over the summer, his accounting office asked him why he had all these “girly drinks” on his restaurant bills.  He proudly responded to them that they were his drinks and he enjoys a fruity frozen beverage.  Feel free to test this recipe out for yourself and let us know if you are on the banana daiquiri boat!

Ingredients
  • 2-3 ripe bananas
  • 1 cup coconut milk
  • 2 tablespoons of lime juice
  • ½ cup of sugar
  • 6 cups of ice
  • 4-8 ounces of rum (depending on how strong you want them)
Instructions
  1. Place half of each of the ingredients into the blender and blend until smooth. Pour into glasses and serve. Repeat with remaining ingredients for second batch.
  2. *Can easily be made without alcohol by omitting the rum. My mom enjoyed them this way.

Strawberry Daiquiri

I have never really been in to making mixed drinks, though but not because I don’t like them.  Usually I keep it simple with a nice glass of wine or a beer.  There is something about mixed drinks and frozen drinks that instill an “I’m on vacation!”  kind of feeling in me.  Over Memorial Day weekend, I was striving to relax on my vacation and instantly thought about making some fun mixed drinks I had seen on all the blogs I read.   I made a different drink each night and served them to my family.   The drinks were a lot of fun and a bit of a mess to clean up after.  (Thanks Mom!)

One of the favorites that I made was the strawberry daiquiri. The timing was perfect since strawberries happen to be the produce of the week at 2 Sisters 2 Cities.  I found this recipe on the Food Network website on my phone when I was at the grocery store determining what I needed to buy.

This recipe called for fresh strawberries, which I thought sounded awesome since there is an abundance of fresh strawberries for such a great deal at the groceries stores this time of year.  Wegman’s (the most amazing grocery store ever) happened to have 2-quart containers of  strawberries for $3.49.  Then, at the liquor store I bought a bottle of rum which was recommended as the brand they use in Puerto Rico,  DonQ Cristal.  It was cheaper than the Bacardi  I had planned on buying.  I am all about a good deal and since I was mixing this in a frozen drink, I wasn’t too hung up on getting the best or most expensive rum.

Strawberry Daiquiri

Ingredients
  • Ice Cubes
  • 2 parts Light Rum
  • 1 part Triple Sec
  • ¾ cup Fresh Strawberries, cleaned and tops cut off
  • 4 small strawberries, cleaned with a slit cut in the side
  • 1 tablespoon Lime juice
  • Lime wedges
  • 1 tablespoon of Granulated Sugar, plus more for rims
Instructions
  1. In a blender pour in rum, triple sec, strawberries, lime juice and 1 tbsp. of sugar. Blend together. Gradually add in ice to your liking (I added about 1 cup of ice.) Take a lime wedge and rub along the rim of the glass. On a small plate spread some sugar and then swirl rim of glass in sugar. Pour the strawberry daiquiri and serve with a straw.

Basil Lemonade Recipe

Before we head into the weekend, I wanted to give you one more summer recipe – basil lemonade.  If you are like many Pinterest users, you pin a lot of stuff that you plan to make one day and never do.  I am also guilty of pinning without abandon :) I have been going through a few of my pin boards to get some recipe ideas and I found this particular recipe for basil lemonade.  Two of my favorite things about summer are fresh basil and a glass of lemonade…this drink merges those flavors together.  It calls for 8 cups lemonade- I used store-bought, but you certainly could use homemade lemonade.  Regardless, it is the perfect beverage to sip outside on a hot summer day.

Ingredients
  • 1 cup sugar
  • 1 cup basil leaves, plus sprigs for garnish
  • 8 cups lemonade (store bought or homemade)
  • 1 and ½ cups cold water
  • ice
Instructions
  1. To make the simple syrup, heat a small saucepan over medium heat and add sugar and water. Bring to a summer and cook (without stirring) until the sugar dissolves and the mixture slightly thickens. This should take about 5 minutes.
  2. Remove simple syrup from heat and add 1 cup basil leaves. Allow the mixture to cool to room temperature. Strain out the basil and store the simple syrup in a container.
  3. Pour 2 to 3 teaspoons of the basil simple syrup into 8 glasses filled with ice, and add a cup of lemonade to each. Garnish with an additional sprig of basil.
Notes
Alternatively, you can store the basil simple syrup in the fridge for up to 2 weeks. The simple syrup would also be refreshing with ice tea, sparkling water, vodka or gin-based cocktails, or even over lemon sorbet. You could also swap out the basil for rosemary, lemon balm, or mint to make other herb-based simple syrups.
