Rice Krispies Treat Eggs Dipped in Peanut Butter Chocolate

Posted by 2 Sisters 2 Cities on March 27, 2013

Rice Krispie Treat Eggs Dipped in PB Chocolate

In college, my roommate and I use to make Rice Krispies treats and eat them when they were hot and gooey before pushing them into a pan.  Everytime I see the advertisement for Rice Krispies treats and their egg shaped recipes, I have the urge to make them.  What’s better than homemade Rice Krispies treats?  Homemade Rice Krispies treats shaped like eggs and dipped in peanut butter chocolate and sprinkles!  That’s what I am talking about!

I also wanted to state that prepackaged Rice Krispies treats are nowhere as good as homemade ones.  Not even close.  Not one bit.  No siree!

Okay, so to make egg-shaped Rice Krispies, you need plastic eggs which you will use as your mold.  Cooking spray is your friend for this process for both the eggs and your hands.  You could also use canola or vegetable oil if cooking spray isn’t your thing.

This recipe would be a lot of to make with your family.  I would recommend making the peanut butter/ chocolate ahead of time in the microwave and letting it cool down a bit to thicken up.  I thought of this genius idea after making them, but if you don’t have sprinkles you could use ground up graham crackers… mmmm s’mores.  If you don’t like peanut butter, than skip this ingredient and melt another ounce or two of chocolate.  Dipping Rice Krispie treat eggs could almost be as fun as dying real eggs.

Ingredients
  • 3 tbsp. butter
  • 1 10 oz. package regular marshmallow
  • 6 cups Rice Krispies cereal
  • cooking spray
  • 5 oz. semi sweet melting chocolate (such as Baker’s)
  • 1 tbsp. Crisco
  • ¼ cup peanut butter
  • sprinkles
Instructions
  1. In a large microwave safe bowl microwave butter for 1 minute or until melted. Add marshmallows and stir to coat with butter. Microwave the bowl of marshmallows for 2 additional minutes and stir to combine. Add in 6 cups of Rice Krispies and stir until combined.
  2. Cover a clean plastic Easter egg with cooking spray. Fill both sides with Rice Krispie treat mix and then close egg to stick both sides together. Lay egg on wax paper to cool. Continue this process until all of the mix is made into eggs. Use cooking spray as needed to prevent sticking.
  3. In a medium microwave safe bowl add in chocolate and Crisco. Microwave in 30 second intervals, stirring in-between, until completely melted and smooth.
  4. Add peanut butter to chocolate and stir until combined.
  5. Dip Rice Krispies Treat eggs in chocolate peanut butter. Let cool slightly on wax paper then dip in sprinkles. Place in refrigerator until chocolate hardens. Best if enjoyed in the same day, if not store in an air tight container.

Caramel Corn

Posted by 2 Sisters 2 Cities on April 4, 2012

I can’t believe Easter weekend is in a few days.   My boyfriend and I learned this year how obsessed we are with Easter Candy.  We have been eating it for treats all month.  Some of my favorites are the Reese’s Peanut Butter Eggs,  Russell Stover Marshmallow Eggs,  Starburst Jelly Beans,  Sour Patch Kid Jelly beans, and Cadbury Mini Eggs.   I have noticed that stores have run low on Easter candy this year.  So if you are not finding the candy that you want to put in your children’s Easter Basket this year,  I have just the idea for you.   Who doesn’t love caramel corn?   This caramel corn recipe is really easy to make and it’s delicious!  After five days, the caramel corn is still really crisp and just as tasty as the first day I made it (I kept it stored in a plastic container.)

Maybe putting this caramel corn in plastic eggs is a little extreme, but it could easily be put into a treat bag with a ribbon to put in an Easter basket.   Nothing goes better with a chocolate bunny than caramel corn!!

Prep time:  25 mins
Cook time:  20 mins
Total time:  45 mins
Serves: 6

Ingredients
  • ½ cup of unsalted butter (1 stick)
  • 1 cup of light brown sugar
  • ¼ cup light corn syrup
  • 2 tsp. kosher salt
  • ¼ tsp. baking soda
  • ½ tsp. vanilla extract
  • 12 cups of popped popcorn (I tried to use a minimal amounts of oil to keep the popcorn fresher longer)
Instructions
  1. Preheat oven to 300 degrees. Line a baking sheet with aluminum foil and then spray with cooking spray.
  2. Place butter in medium pot over medium heat to melt. Add in brown sugar and corn syrup and stir until sugar dissolves.
  3. Bring to a boil, then turn heat down to low and allow sugar syrup to simmer for 4-5 minutes without stirring.
  4. After, stir the mixture and continue to simmer for 5-6 minutes, stirring every 30 seconds. The caramel mixture will start to become a deep golden color.
  5. At this point turn off heat and stir in salt, baking soda and vanilla extract.
  6. Once the caramel is all mixed together, pour over large bowl of popcorn. Stir the caramel into the popcorn, trying to get all the popcorn mixed in. You will need to work quickly because caramel with start to dry. (Also note that as you bake it you will be able to spread the caramel out more.)
  7. Spread the popcorn out on the lined baking sheet and place in the oven.
  8. Bake for 15-20 minutes, stirring every five minutes. The finished popcorn will have a deep amber color and the caramel will looks a bit like sugar crystals. I usually go the entire 20 minutes because every five minutes I use a rubber spatula to break up and stir the caramel so each piece of popcorn has a little caramel on it.
  9. Let the caramel corn cool and store in an airtight container.

Baby’s First Easter Basket

Posted by 2 Sisters 2 Cities on March 6, 2012

Even though Easter is still a month away, I like to start hiding away things for my son’s Easter basket as I come across fun ideas in stores or on-line.  Since young babies can’t have a basket of candy, here are some alternative Spring and Easter-themed goodies you can include instead for baby’s first Easter basket.  I actually started this post a year ago after Easter, but I thought it would be more timely to post it before the holiday occurred this year.  Although this was my son’s first Easter basket, many of the items would also be suitable for baby’s second or third Easter as well!

The basket itself is from Pottery Barn Kids.  I filled it with books, bunnies, chicks, and a couple pieces of Easter candy for mom and dad!  Here are some suggestions for what to include in baby’s first Easter basket:

Books:

–Pat the Bunny (Touch and Feel Book) by Dorothy Kunhardt- my son loves to pat the bunny, play peekaboo with Paul, and put his fingers through “mummy’s ring”…a great interactive classic.
–My First Easter by Tomie dePaolo- We had all of these “first” holiday books for my youngest sister growing up…a cute board book.
–That’s Not My Bunny (Usborne Touchy Feely Board Books) by Fiona Watts- We own the bunny, monkey, dinosaur, and baby version of this series.  It’s so adorable!
–Baby Touch & Feel: Farm by DK Publishing- A fun farm animal book.
–Peter Rabbit Naturally Better Classic Gift Set by Beatrix Potter- While this book may be too complex for young babies, but it would be a great gift for your child to have over the years as they grow.
–Baby Touch ‘n Feel Easter Bunny by Roger Priddy
–Where are Baby’s Easter Eggs? A Lift the Flap Book by Karen Katz- same author as Where Is Baby’s Belly Button?
–Spot’s First Easter by Eric Hill
–Moo Baa La La La by Sandra Boynton- This is hand’s down my son’s favorite book!

Stuffed Animals:

–Angel Dear lovie blanket– The bunny, duck, or lamb lovie would both be a great gift for baby’s Easter basket.  My son has the monkey and is infatuated with it (we had to buy two in case he ever lost the first one!)
–Angel Deal stick rattle

Toys:

–Hide N Squeak Eggs– I’ve known a few people who have had this toy and their kids really seem to like it!
–Easter stickers

Snacks/Food-Related:

–Peter Rabbit Organics– 4 oz pouches- I just recently noticed these at Target…my son loves pouches!
–HappyBaby Organic Puffs
–Baby’s First Easter bib

What do you like to include in your baby’s Easter basket?  What did you get in your basket when you were a kid?

p.s. A note about our Amazon store that I have linked most of these items from….We created this Amazon store to share some of our favorite products that we use. Products found in this store are the same price as the regular Amazon site.  You can use your normal Amazon account to buy these items through our store and add other Amazon items to your shopping cart.  We get a certain percentage of store sales, which helps us diffuse some of the on-going costs of running our blog.  Thank you!  :)
