Stovetop Oatmeal

Before Thanksgiving, my mom visited me for a few days while Matt was on a business trip.  I picked my mom up from the airport and surprised her by taking her to a cookbook signing for Giada’s new book Giada’s Feel Good Food.  The signing was at the Stanford Shopping Center in Palo Alto, which is beautiful, so that was a plus.  We waited in line for 2 hours and finally we got to meet Giada.

I have never been to something like this and of course, I was so starstruck I couldn’t think of anything to say when it was our turn. While I was smiling awkwardly, my mom kept talking to Giada about how much she loves her shows and books while Giada signed our books.  When we walked away, we had a really good laugh about how we reacted to seeing Giada!  We went to the restaurant next door and sat outside for a great dinner.  We even got to see Giada again when she left the book signing from our table at the restaurant.

When we got home that night, we decided to make one of the oatmeal recipes in her book that I happened to have all the ingredients for.  We reheated the oatmeal for the next two mornings for breakfast and it was so delicious and filling.   During the whole month of December I made this oatmeal on Sunday night to have for breakfast for the whole week .  I put each serving of oatmeal in a lidded container and stored then in the refrigerator.  When I got to work, I would reheat it for 1 -1 1/2 minutes in the microwave.   I really enjoyed the oatmeal and found myself look forward to it.   This breakfast gave me the energy during the holiday season and stopped me from feeling sluggish.

Now that it is January and things are back to normal around here, this oatmeal is definitely going to be a breakfast staple.   I am back to Weight Watchers after last month’s cookies so this breakfast fits perfectly into my plan.

Stovetop Oatmeal
 
Ingredients
  • 3½ cup almond milk
  • ⅛ tsp. kosher salt
  • 1 tsp. vanilla extract
  • 2 cups old fashioned oats
  • 2 tbsp. dried cranberries
  • 1 tbsp. brown sugar
  • ¼ tsp ground cinnamon
  • 2 tsp. granulated sugar
Instructions
  1. Add almond milk, kosher salt, and vanilla extract to a sauce pan and bring to a boil over medium heat. Once the milk begins to boil, add in oats and cook for 6-7 minutes. Cook an additional 1-2 minutes if you prefer a thicker oatmeal.
  2. Stir in dried cranberries and brown sugar. In a small bowl combine the ground cinnamon and sugar. Separate the oatmeal into four bowls and sprinkle each bowl with ¼th the cinnamon sugar mix.
  3. To make ahead- Separate cooked oatmeal into 4 lidded containers and sprinkle with cinnamon sugar. Store in the refrigerator until needed. To reheat oatmeal remove lid and microwave for about 1-1½ minutes. Stir and enjoy!

Weight Watchers

I joined Weight Watchers again because some of the weight I originally lost was creeping back on.   If you haven’t heard from the millions of commercials,  Weight Watchers has changed their point system to PointsPlus.   I started almost two weeks ago and I love the new plan.  Food is worth more points, but you also get more points.  PointsPlus are calculated with a calculator now and you input the carbohydrates, fat, fiber, and protein. On the old plan I would often go over my points 1-2 points a night, but on the new plan I haven’t gone over my plan yet.  The best part is that I haven’t been hungry and I lost 4.4 lbs my first week!  I know- it’s most likely water weight your first couple of weeks, but it was still great results to see and keep me going!

Fruit is now considered 0 points (within reason) on the new plan which is great for me because I love fruit.  I find myself snacking on fruit now instead of pretzels and granola bars like I use to.   I will let you know my progress,  and hopefully I will be sharing a lot of recipes for healthy, filling foods in the next few months.   If you have been thinking about joining and haven’t yet because you liked the old  program,  you should definitely try it out!  It gave me the boost I needed to get the scale moving the other way.

Winter Warmer Recipe: Tropical Fruit Salad

Since we are in midst of winter with no end in sight, I decided to make a tropical fruit salad today.  This recipe is super easy, but will help beat out some of the winter doldrums!

Tropical Fruit Salad

Ingredients:
-3 kiwis
-1 mango
-2 oranges
-1 tablespoon honey

Peel and slice up the fruit.

Put the fruit in a bowl and stir in the honey.

Sit back and enjoy your tropical fruit salad.  Close your eyes and picture yourself on a warm island somewhere!  (And tune out all meteorologists who keep talking about two upcoming snow storms.)

Jalapeno Poppers

I have been on a Jalapeno Popper kick lately.  Although they are soooo delicious store bought they aren’t as healthy as I would like.  Therefore I set off to find a healthier version of them.   In one of my health magazines I found a recipe for them for 144 calories for 2.  The are called Gooey Jalapeno Poppers and they are from the cookbook “Now Eat This!” by Rocco DiSpirito.   They are made with reduced-fat whipped cream cheese and 75% fat free cheese.   I have already made them twice since I have found the recipe and they are awesome! Enjoy!

Western Getaway

I recently got the chance to take a long weekend vacation to the Red Mountain Spa in Utah.  Husband M and I usually like 2 different types of vacation…he is definitely an outdoor adventurer, while I usually lean towards a more relaxing trip.  This resort was the perfect blend of the two.  Awesome hiking and sights to see for Husband M and a spa and pool for me.  The food at the spa was very healthy, but delicious at the same time.  We definitely left feeling very relaxed and happy with our time here.

One of the days, we signed up for a group outing to Zion National Park.  Husband M has had the chance to visit a number of national parks…Yosemite, Grand Canyon, Volcanos at the Big Island, Great Smokey Mountains, and Acadia.  He was excited to check this one off his list.  We were not disappointed.  The views were spectacular:

We hiked the first two miles of the Angels’s Landing trail.  The trail features Walters Wiggles, which looks a bit like San Francisco’s Lombard Street:

We decided against doing the last 1/2 mile of Angel’s Landing as it was a bit precarious and required you to hold on to a chain to get to the top:

We did get a chance to do two additional trails that day…the Emerald Pools and a trail that was on the other side of the Zion Park tunnel.

Back at the resort, we did an Adventure level hike one morning.  It was a really early hike…6:50 am start time.  When we finished, we were ready for lunch until we realized it was still 10 in the morning!  The hike at adjacent Snow Canyon State Park also offered some beautiful views:

I really hope to go back here one day for another vacation.  It was a great combination of adventure, outdoors, relaxation, and great meals.
