Rice Krispie Treat Eggs Dipped in PB Chocolate

In college, my roommate and I use to make Rice Krispies treats and eat them when they were hot and gooey before pushing them into a pan.  Everytime I see the advertisement for Rice Krispies treats and their egg shaped recipes, I have the urge to make them.  What’s better than homemade Rice Krispies treats?  Homemade Rice Krispies treats shaped like eggs and dipped in peanut butter chocolate and sprinkles!  That’s what I am talking about!

I also wanted to state that prepackaged Rice Krispies treats are nowhere as good as homemade ones.  Not even close.  Not one bit.  No siree!

Okay, so to make egg-shaped Rice Krispies, you need plastic eggs which you will use as your mold.  Cooking spray is your friend for this process for both the eggs and your hands.  You could also use canola or vegetable oil if cooking spray isn’t your thing.

This recipe would be a lot of to make with your family.  I would recommend making the peanut butter/ chocolate ahead of time in the microwave and letting it cool down a bit to thicken up.  I thought of this genius idea after making them, but if you don’t have sprinkles you could use ground up graham crackers… mmmm s’mores.  If you don’t like peanut butter, than skip this ingredient and melt another ounce or two of chocolate.  Dipping Rice Krispie treat eggs could almost be as fun as dying real eggs.

Rice Krispies Treat Eggs Dipped in Peanut Butter Chocolate

Ingredients
  • 3 tbsp. butter
  • 1 10 oz. package regular marshmallow
  • 6 cups Rice Krispies cereal
  • cooking spray
  • 5 oz. semi sweet melting chocolate (such as Baker’s)
  • 1 tbsp. Crisco
  • ¼ cup peanut butter
  • sprinkles
Instructions
  1. In a large microwave safe bowl microwave butter for 1 minute or until melted. Add marshmallows and stir to coat with butter. Microwave the bowl of marshmallows for 2 additional minutes and stir to combine. Add in 6 cups of Rice Krispies and stir until combined.
  2. Cover a clean plastic Easter egg with cooking spray. Fill both sides with Rice Krispie treat mix and then close egg to stick both sides together. Lay egg on wax paper to cool. Continue this process until all of the mix is made into eggs. Use cooking spray as needed to prevent sticking.
  3. In a medium microwave safe bowl add in chocolate and Crisco. Microwave in 30 second intervals, stirring in-between, until completely melted and smooth.
  4. Add peanut butter to chocolate and stir until combined.
  5. Dip Rice Krispies Treat eggs in chocolate peanut butter. Let cool slightly on wax paper then dip in sprinkles. Place in refrigerator until chocolate hardens. Best if enjoyed in the same day, if not store in an air tight container.

Classic Deviled Eggs

Deviled Eggs

Deviled Eggs are an Easter staple in my book.  Growing up, we used to decorate eggs with the Paas dye kits from the grocery store.  My mom would set up mugs with all the colors and my sisters and I would “wait patiently” for the color we wanted.  My sister C was always the artistic one and would make beautiful tie-dye patterns, striped, or multi-colored eggs.  I, on the other hand, didn’t have the patience for that so what I would do it  just leave my eggs in the dye for as long as possible to see how dark and bright I could get the color.  My favorite was the purple dye because it would never come out a perfectly solid color like the other dyes.  For some reason, the purple dye always made these beautiful splotches of pink, blue, and different shades of purple.

When we were all done with coloring our eggs, we would let them dry in our own individual styrofoam egg carton.   Later on, she would make deviled eggs from our colored eggs and I imagine egg salad later on in the weeks (How else do you use up 3-4 dozens hard boiled eggs because each of her children insisted on dying a whole carton full on their own.)

There are plenty of variations of Deviled Eggs, but today I am going to share with you a classic version.   If dyeing eggs isn’t part of your Easter tradition, have no fear as you can just make the eggs as specified below.

Ingredients
  • 8 large eggs
  • 4 tbsp. mayonnaise (I used light)
  • 1½ teaspoons of vinegar (cider or white)
  • ¾ tsp. whole grain mustard
  • ¼ tsp. Worcestershire sauce
  • Salt and pepper, to taste
  • Paprika, for sprinkling
Instructions
To hard-boil eggs-
  1. Gently place the eggs in a medium saucepan and cover with cold water (water level should be 1-inch above the eggs.) Place saucepan on stove-top, set to high and bring to a boil. Once boiling, remove saucepan from heat, cover, and let stand for 10 minutes. Fill a medium-sized bowl with ice cold water while the eggs are sitting. After the 10 minutes, take eggs out of hot water with a slotted spoon and place in the ice water gently; let sit for 5 minutes.
To Make Deviled Eggs-
  1. Peel eggs and then slice length wise. Take out the yolks of the eggs and place them in a medium sized bowl. With a fork, mash the egg yolks until all the large chunks are gone. Add in remainder of ingredients and stir with a rubber spatula. Mash mixture on the side of the bowl to smooth out any lumps.
  2. Prepare a pastry bag with a large star tip (I used Wilton’s 6B). Take egg yolk mixture and add it to the pastry bag, then twist the top portion closed to push the eggs into the bag further. Pipe the yolks into the egg whites by applying pressure to pastry bag and lifting up slowly and releasing the pressure as the egg white fills with yolk. Sprinkle yolk filling with paprika and serve immediately.

10 Recipe Ideas for Leftover Easter Eggs

Happy Easter!  I hope you have a wonderful holiday and that you got a chance to decorate lots of Easter eggs!  With all these extra eggs, I decided to pull together a list of 10 recipe ideas for all those leftover Easter eggs.  I made about two dozen eggs yesterday and dyed them with the standard Paas egg dye kits.  I did see a lot of blog posts this year showing how to use beets, cabbage, blueberries, and turmeric to dye eggs naturally, but I decided to go the traditional all-American route this year with the dye tablets and vinegar.

My husband likes to eat hard-boiled eggs just plain, but we still had a lot of eggs to go through (it’s recommended that you eat hard-boiled eggs within five days of making them.)  Here are 10 recipes I found that use hard-boiled Easter eggs, or just regular hard-boiled eggs :)
