Cinnamon Sugar Apple Cake

Cinnamon Sugar Apple Cake  {from 2 Sisters 2 Cities} Apples by the bushel have finally started showing up in my local grocery store and farmers markets.  I will be the first to admit it- I’m a complete apple snob.  I grew up in upstate NY, home of some of the best tasting apples around.  We used to go apple picking several times each fall at our local apple orchard and I probably ate at least half a dozen apples  straight off the tree each time.  I have spent most of my adult life in Massachusetts and it can be a bit difficult to find really good apples around here…I find most taste like mush compared to the apples of my youth.*  However, I have found a few varietals at various vendors at farmers markets that can come close to my beloved Beak & Skiff apples.  And when it comes to baking with apples, my apple palate is not quite as particular. Cinnamon Sugar Apple Cake  {from 2 Sisters 2 Cities} As we approach the end of September, our family is finally falling into the routine of our new school year.  T is attending his second year of nursery school in the afternoon four days a week.  We spend our mornings taking a walk, going to various activities, or running errands.  After I drop T off at school, N usually naps for a couple hours which allows me to catch up around the house and sometimes even start dinner.  This week, I was even able to find the time to make this Cinnamon Sugar Apple Cake.  I’ve been buying up apples right and left around here in the search of delicious apples and now I have an entire fridge drawer devoted to them.  It’s also “Apple Week” at T’s nursery school so I knew he would love to try some apple cake for his after-school snack. Cinnamon Sugar Apple Cake  {from 2 Sisters 2 Cities} Last year, T went to morning preschool and since N was a bit younger, he took both a morning and afternoon nap.  I used to spend those school mornings doing my catch-up work which has been shifted to the afternoon.  I tend to hit a wall during that post-lunch and have started using my Keurig again for an afternoon cup of coffee to keep my energy level up.  Nothing pairs better with coffee than a warm, delicious slice of cake!  I paired my Cinnamon Sugar Apple Cake with a cup of coffee flavored with International Delight’s Sweet Cream coffee creamer.  A perfect afternoon treat! Cinnamon Sugar Apple Cake

A delightful autumn treat that can be enjoyed anytime of day. Greek yogurt is a great substitute for oil in baking and keeps the cake moist without the extra calories and fat.
Ingredients
  • 1 and ½ cups brown sugar
  • ¼ cup plain Greek yogurt
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 2 and ½ cups all-purpose flour
  • 2 cups peeled and chopped apples (approximately 5 medium apples)
  • ½ cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon butter, softened
Instructions
  1. Preheat oven to 325 degrees Fahrenheit and grease a 9x13 pan. In a large mixing bowl, add in all ingredients through the chopped apples. Mix thoroughly and pour cake batter into the greased pan. Smooth into pan with the back of a spoon or spatula.
  2. Meanwhile, mix together sugar, cinnamon, and butter in a small bowl with a fork. Sprinkle cinnamon sugar mixture over batter.
  3. Bake cake for 40 minutes or until set.

Menu Plan Monday- Week of October 29th

It’s a Monday and I am working on my menu for the week so I thought I would do a quick Menu Plan Monday post!  I have been letting my cooking magazines pile up so I vowed to finally go through them today and pull out some recipe ideas for the week.  Have you seen this November’s issue of Cooking Light– it’s huge!  I’m looking forward to sitting down and reading it in its entirety, but for now I just flipped through.  They list the top 25 best Cooking Light recipes ever from 1987 through 2011.  I’m thinking about making all 25 dishes and doing a post about each one- might be a fun challenge and a sure fire way to try some great recipes!

Anyway, here’s my menu plan for the week.  I’m taking a few nights off here and there from cooking.  My husband has requested low-carb meals, which is always a challenge because I enjoy making carb-y dishes.

Monday: going out to eat
Tuesday: Walnut and Rosemary Oven-Fried Chicken and a side salad from Cooking Light, November 2012
Wednesday: Poblano-Turkey Sausage Chili from Cooking Light, October 2012
Thursday: Lemony Chicken Saltimbocca with steamed haricots verts from Cooking Light, November 2012
Friday: Beef and Broccoli Bowl from Cooking Light, October 2012
Saturday: night off from cooking
Sunday: Soy-Ginger Pork Chop with Stir-Fried Bok Choy from Martha Stewart Everyday Food, November 2012 – recipe not available on-line, but here is a similar recipe

10 Recipes for October

As K and I approach our 3rd anniversary of blogging together, I realized we have quite a number of recipes in our archives.  While we do share them in our recipe index, I wanted to highlight a few (10 in fact) recipe for October. Think pumpkin recipes, Halloween baking, and comforting dinners.

  1. Pumpkin Spice Iced Coffee– While this recipe is for iced coffee, you could also use the pumpkin spice simple syrup for regular coffee drinks or lattes.
  2. Black Cat Halloween cookies– K posted about these cookies last year. I’m definitely going to make these for Baby T later on this month.  Meow!
  3. Pumpkin Chocolate Chip cookies– I actually started to make these this afternoon so I could post them to the blog and realized that K had already done so 2 years ago.  Plus, I was out of eggs.  Just wasn’t in the cards today.
  4. Chicken Piccata– This is the perfect dinner for a cool fall night.  One of my favorites.
  5. French Onion Soup– I wish I had a bowl of this soup right now to warm up with.  Yum!
  6. Minestrone Soup– Another great soup to warm up with…serve it with the following:
  7. 5-Minute Artisan Bread– An easy recipe to make a lot of really tasty bread (the extra dough keeps in the fridge for up to 2 weeks!)
  8. Chicken Chili– I completely forgot about this awesome chili recipe until I saw it in our recipe index.  I have to make it again this week.  The leftovers make really good nachos as well.
  9. Pumpkin Mousse– This was one of the first recipes I ever posted!  Sorry, no pictures back then…haha.  I’ll have to make it again this fall and post some photos.  It’s definitely a crowd pleaser.
  10. Apple, Walnut, and Blue Cheese Salad with Dried Cherries– I’ve made this recipe several times this fall.  I’m in love with it!

Menu Plan Monday- Week of September 17th

It’s been awhile since I’ve done a Menu Plan Monday and since I actually planned my menu for the week today, I thought I would share the recipes in a post.  With the fall chill now in the air, I’ve been filing away my summer recipes and started to look for colder-weather meals.  I have to admit that I had to put the heat on for the first time this season this morning- it was 52 degrees in our house!  Here are some meal ideas sure to warm you up for the week:

Menu Plan for the week of September 17th:

Monday: Slow-Cooker Chicken Tikka Masala with Indian Basmati Rice

Tuesday: Beef Noodle Salad Bowls with Steamed Broccoli

Wednesday: Quick and Easy Beef Chili from Whole Foods Meals for 4 under $15, Fall 2012 (could not find recipe on-line)

Thursday: Shrimp Enchiladas from Whole Foods Meals for 4 under $15, Fall 2012 (could not find recipe on-line)

Friday: Jambalaya and a side salad

Saturday: night off from cooking!

Sunday: Sunday Roast Chicken, Apple, Walnut, and Blue Cheese Salad, and Classic Apple Crisp for dessert
