Strawberry Margaritas

Happy Cinco De Mayo!  Are you looking for some recipes to celebrate with?   Well, you have come to the right place.   I love, love, love me some Mexican food so it isn’t too hard to find a recipe in my my collection to make around here.

Over the weekend, I mixed up a couple batches of these Strawberry Margaritas to celebrate with.   With strawberries on sale for so cheap around this time of year in California, it seemed like the perfect flavor  for our “margs.”  I love this classic recipe for Margaritas,but sometimes a little variation is needed.  The best part about this recipe is that you make strawberry simple syrup which can then be used to make other drinks like strawberry milk, pink lemonade, or even strawberry-flavored seltzer water by mixing in a few spoonfuls.  I recommend making the strawberry simple syrup ahead of time.  I also juiced my limes ahead of time so when I was preparing the drinks, everything was ready.  Enjoy!

Strawberry Margs

Strawberry Margaritas
Author: 2 Sisters 2 Cities
Serves: 2 drinks
 
Ingredients
  • 4 oz. triple sec
  • 4 oz. tequila
  • 5 oz. strawberry simple syrup
  • 4 oz lime juice
  • Ice
  • sugar and kosher salt, to garnish
  • lime slices and strawberries, to garnish
Instructions
  1. To make simple syrup- In sauce pan, heat 1 cup of water with 1 cup of sugar, stir and heat until mixture is clear. Put in a mason jar and let cool.
  2. To make Strawberry simple syrup, put in 1 cup of cooled simple syrup and 1½ cups of cleaned, hulled strawberries. Blend until smooth.
  3. To make Margarita- Mix together all ingredients with ice. Rub a slice of lime on the rim of 2 glassed, dip glassed is the sugar/salt mixture so it sticks to rim. Add additional ice to glasses and pour mixed drink into glasses. Garnish with lime wedges and strawberries. Serve immediately. Enjoy!

Valentine’s Day Round-Up

It’s officially one week until Valentine’s Day and I have got some serious planning to do!  I have yet to make a single treat or card and our V’day menu remains a blank sheet of paper.  I figured a Valentine’s Day round-up was in order to spark some serious inspiration!

These heart-shaped Cutout Sugar Cookies with Buttercream Frosting have recently been our most popular post and for good reason!  They are amazingly delicious cutout cookies without all the fuss that royal icing requires.

I also love these these M&M cookies.  While I made them for the first time last year for Valentine’s Day, I made them throughout the year with various colored M&Ms.

Diet Cran-Strawberry Spinach Smoothie

I was recently asked by Ocean Spray to try their Diet Cranberry Juice Drink in a smoothie recipe.  I had been wanting to try a smoothie that involved spinach for the past few months and I thought cranberries and spinach sounded like the perfect combination.  I came up with a diet cran-strawberry spinach smoothie recipe as a result.  By swapping out a full calorie juice for a diet juice, such as Diet Ocean Spray Cranberry Juice, you can cut calories and still enjoy a delicious, nutrient-packed smoothie.  This smoothie would definitely be a great way to kick-start your day, especially if you are calorie conscious.

Ocean Spray Diet Cranberry Juice

Since Diet Ocean Spray Cranberry Juice only has 5 calories per serving, you can focus your calories in this smoothie on really nutritious ingredients.  I love to use Greek yogurt in smoothie recipes as it packs in so much protein.  I also used strawberries and half of a banana to add more nutrients and flavor.  I used about 1/4 of a cup of spinach leaves in this particular smoothie, but I’ve heard that you can add up to 1 cup for a smoothie.  Since it was my first time trying it, I started off with a small amount of spinach and I hope to build up to more as I get used to the taste.  You could also try adding a little bit of flax seed or chia seeds to add in some omega-3 fatty acids.

Ocean Spray Diet Cranberry Juice Ingredients

While I thought the Diet Ocean Spray Cranberry Juice was great in a smoothie, I also enjoyed it mixed with a glass of sparkling water.  Ocean Spray also sent me a recipe card for an awesome sounding 50-calorie Cosmo which I definitely look forward to trying this summer post-pregnancy.  For other Diet Cranberry Juice recipes, check out the Ocean spray website.

Diet Cran-Strawberry Spinach Smoothie

Diet Cran-Strawberry Spinach Smoothie
Prep time:  5 mins
Total time:  5 mins
 
Ingredients
  • ¾ cup Diet Ocean Spray Cranberry Juice Drink
  • ¾ cup fresh or frozen strawberries (if you use fresh strawberries, be sure to add about ¼ cup of ice as well)
  • ¾ cup low-fat, plain Greek yogurt
  • ½ banana
  • ¼ cup baby spinach or regular spinach leaves (you can add up to 1 cup of spinach, but I recommend starting off with a small amount and working up to more if this is your first green smoothie)
  • 1 teaspoon vanilla extract
Instructions
  1. Combine all ingredients in a blender. Blend for a few seconds on high speed (you may need to stop the blender and scrape down the sides so that all ingredients get incorporated.) Continue to blend until everything is thoroughly combined. Serve in a large glass ( and preferably with a fun straw!)

Fresh Produce Tuesday- Week #11: Strawberry Recipes

For this week’s Fresh Produce Tuesday series, we are featuring  many amazing strawberry recipes.  Strawberries are my all-time favorite fruit.  I enjoy them almost year-round, but the most delicious ones are the fresh, local strawberries found every June from local farms.  I love that strawberries are so versatile- I enjoy them in a smoothie or with Greek yogurt in the morning, with a spinach salad for dinner,  in a sweet dessert, or I just pop them in my mouth just as they are.

I’ve been noticing fresh spring produce is abundant lately at the farmer’s markets.  Here are  recipe ideas for Asparagus, Artichokes, Spring Onions, Peas, Garlic Scapes & Spring Garlic, Rhubarb, Fava Beans, Radishes, Lettuce, and Morels in case you missed any of the previous weeks of our series.

I made this strawberry shortcake recipe a few weeks ago and loved how it turned out.  I was a little shocked how much heavy cream was used in the shortcake base alone, but it created a perfectly tasting cake to douse with strawberries and whipped cream.
