Blueberry Lemon Popsicles

I’m kicking off a new summer series today starting with this recipe for blueberry lemon popsicles.  Each week this summer, I will be posting a new popsicle recipe!  I just bought my first set of popsicle molds and I am excited to try out a lot of variations.

I created this week’s blueberry lemon popsicle with ingredients I already on hand in the house including the fresh mint from my CSA pick-up.  I’m excited for baby T to try it out this afternoon, but it will definitely have to be an outdoor event :)

Blueberry Lemon Popsicles

Prep time:  5 mins
Cook time:  4 hours
Total time:  4 hours 5 mins
Serves: 6
 
Ingredients
  • 5-6 mint leaves, cut chiffonade-style
  • 1 lemon, juiced and lightly zested
  • 2 tablespoons blue agave
  • 1 and ½ cups blueberries
  • 1 cup cold water
Instructions
  1. Place all the ingredients in a food processor or blender. Blend until smooth and pour into popsicle molds (leave a little extra room to allow for the ingredients to expand while freezing.) Place in a freezer for 4 hours or until frozen.
  2. Makes 6 full-size popsicles.

Fourth of July Menu Ideas

15 Summer Recipes

We’ve been trying so many great sumer recipes lately and I wanted to pull together some Fourth of July menu ideas in case you are still looking for something for the upcoming holiday.  Since the 4th falls on a Wednesday this year, why not kick off your patriotic festivities this weekend and continue it for the next week?  Cook up some hotdogs and hamburgers on the grill and add some of these additional summer menu items:

Breakfast:

  • Blueberry Buttermilk Breakfast Cake
  • Baked French Toast
  • Cinnamon Raisin Swirled Bread
  • Freezer Sausage, Egg, and Cheese Breakfast Sandwiches
  • Iced Coffee

Appetizers & Cocktails:

  • Strawberry Daiquiri
  • Basil Lemonade
  • Red White and Blue Trash Snack Mix
  • Layered Taco Dip

Sides:

  • Salt Potatoes
  • Greek Pasta Salad
  • Asparagus Risotto

Desserts:

  • Strawberry Cupcakes with Strawberry Buttercream Frosting
  • Raspberry Truffle S’mores
  • Frozen Cupcake S’mores

Raspberry Truffle S’mores

Clearly I have one thing on my mind this Memorial Day weekend- s’mores!  The other day, I made Frozen Cupcake S’mores and today I am making Raspberry Truffle S’mores.  Don’t get me wrong, there’s nothing wrong with just a regular s’more, with a chocolate square and toasted marshmallow stuck between two graham cracker squares.  I just can’t stop thinking of different s’more variations, hence my Raspberry Truffle S’more creation.

How can you go wrong with the perfect pairing of chocolate and raspberries?  I made this Martha Stewart Everyday Food Chocolate-Raspberry Tart a couple of summers ago and I loved the flavor combination.  Here’s an easier way to get to that same raspberry-chocolate goodness:

Raspberry Truffle S'mores

Prep time:  3 mins
Cook time:  2 mins
Total time:  5 mins
Serves: 4
 
Ingredients
  • 8 graham cracker squares
  • 4 marshmallows
  • 4 chocolate truffles, cut in half (I find these at Whole Foods near the gourmet cheese section)
  • 12 raspberries, gently washed
Instructions
  1. Set out graham cracker squares. Place the halved chocolate truffles over 4 of the squares. Over a campfire (or an oven range), toast a marshmallow using a stick or kebob skewer. Once toasted to your desired level, remove marshmallow from stick/skewer and place on top of one of the graham cracker square with the chocolate truffles. Place 3 raspberries on top. Top off with a graham cracker square. Repeat with the rest of the marshmallows. Enjoy immediately.

Memorial Day Weekend Menu Ideas

It’s the unofficial kick-off to summer this weekend and I have been trying to pick out a menu that captures this essence.  I’ve looked through the 2 Sisters 2 Cities recipe index to find the perfect Memorial Day Weekend menu ideas:

On The Grill:

  • Grilled Fish in Foil Packets with Scallion Rice
  • Southie Steak Tips
  • Lamb Sliders with Blue Cheese

On The Side:

  • Orzo and Spinach Salad with Lemon-Cranberry Vinaigrette
  • Sweet Potato French Fries
  • Nantucket Birthday Clam Chowder
  • Sausage, Pepper, Onion and Potato Bake (this could definitely be served as a main course as well)

Dessert:

  • Nan’s Nutella Cookies
  • Ultimate Chocolate Chip Cookies
  • Extreme Three Layer Brownies
